Because Google can always listen to you through your phone's microphone, and if
you give voice commands, Google can follow it.
In addition, if

1. How does Google
listen to you?
If you're surprised that
Google is listening to you all the time, here are some plausible reasons to leave
your mobile device's microphone open:

should recognize when you need help.

activate voice recognition every time you say "Hey Google".

voice recognition when you say “Hey Google”.
For these reasons, there is
no legal obstacle to Google listening to you all the time, but for many it is
unacceptable. And when you install these apps, Google does so with your
permission. Moreover, very few people pay attention to the permissions that
most people grant when installing these apps.

Google store my voice recordings?

to My Google Activity in your web browser and make sure you are signed in to
your Google account. Now scroll down to Web & App Activity and select
Manage Activity. Next, select Filter by date and product.
